ELIZABETH JOAN HINKER "Betty" was born on November 7, 1940 at McIntosh, SD.  She was the youngest of ten children born to Edward William and Lena (Watznauer) Hinker. Betty attended first grade in McLaughlin and the remainder of her grade school years at Cedar Valley School north of the Hinker farm.

Betty and her sister then went to Aberdeen to live with their eldest sister to attend high school.  Betty had already met Ed Soebbing at family gatherings and there was continual correspondence during her freshman year.  Ed had come to the United States in 1952 and was working for her aunt and uncle.

Betty and Ed were married on June 4, 1957 and continued to live with Herman and Frances Ruhoff.  Herman and Frances moved to Lemmon within a year as Herman's health was failing.  The eventually sold their farm to Ed and Betty where they farmed, raised cattle and pigs, and three little girls.

She was an avid gardener, excellent baker and cook which she did a lot of as Ed loved to host parties or bring home hitch hikers he found on the road.  She enjoyed caring for her flowers, mowing her yards, tending to her fruit trees, always making sure to keep the machinery off her manicured yard.

On August 4, 2021, she became suddenly and severely ill and died peacefully at home with her loved ones.  All of her grandkids had made it home to be with her.

Surviving family members include her 2 daughters and 1 son-in –law, Teresa and Dale Dillman, Watauga, SD; Patty Jo Shryock; 8 grandchildren, Shannon (Troy) Mollman; Adam (Stephanie) Shryock; Brian (Krista) Dillman; Kristina Mauldin; Mark (Ashley) Dillman; Nick (Michelle) Shryock; Edward (Melissa) Dillman; Jeromy (Holly) Shryock; 21 great grandchildren; 3 sisters, Sister Teresa Hinker (OSB) Rapid City, SD; Leonora Murray, Moorehead, MN; and Sister Margaret Hinker (OSB) Rapid City, SD.

She was preceded in death by her parents, her husband, Edward on December 1, 1997; a daughter, Debbie; a son, Gustav in infancy; 2 sisters, Marie Hetzel and Evelyn Hinker; and 4 brothers, Bob, Herb, John, and Gerald "Joe" Hinker.

Visitation will be one hour prior to services at the church in Watauga.
